Preheat a convection oven to 350F. Grease the bottom of a 13x9 pan with shortening, butter, or cooking spray. Mix dry ingredients in a large bowl. Mix liquid ingredients in a smaller bowl. Combine all ingredients in the large bowl. Avoid overmixing. Bake in a conventional oven for 30-40 minutes. Bake in aconvection oven for 20-30 minutes.To test doneness, remove the pan from the oven andplace a toothpick in the center.
